Zucchini Fritters

Ingredients

Method

  1. Coarsely grate zucchini and onion into large bowl. Sprinkle with salt & pepper. Squish everything and rest for 5-10 min.
  2. Rub in flour. Sprinkle in baking powder. Should feel like pancake batter.
  3. Tablespoon the mix into hot pan with oil. Flip when half done.
  4. Drain and serve immediately.
