Method

  1. In a large wok, start cooking the onion and garlic and chillis with a little oil.
  2. Add a little water and the potatoes.
  3. When the potatoes soften a little, add the spice mix.
  4. Then add the carrots and parsnips. Add water as necessary.
  5. Then add zucchini.
  6. When all the veggies are soft, lower the heat and stir in the yoghurt and coriander.
  7. Pour veggie mixture into pie tin. Mix in frozen peas. Cover with pastry and bake for 20min or so.
