Makes 2 wellingtons
Ingredients
- 2 sheets puff pastry
- 2 cups Quorn mince (1 bag)
- 2 sticks celery
- 2 carrots
- Small handful mushrooms, sliced
- 1 onion, chopped
- 1 garlic
- 1/2 cup lentils
- 3 eggs
- 1 cup bread crumbs
Method
- Cube celery and carrots. Steam for 5 min. Boil lentils for a few minutes at the same time.
- Meanwhile, quickly cook garlic in oil, then add mushrooms. Season, and cook lightly till brown.
- Lightly cook onion. Add celery and carrots. Saute. Add lentils. Mix in pinch of italian herbs, a bit of vinegar, salt & pepper etc. Leave to cool for a few minutes.
- Stick mince into large bowl. Mix in breadcrumbs, veg mix, eggs. Add extra flavour.
- Quarter mince mixture. Add half to each sheet of pastry. Add sliced mush. Add remainder of mixture on top. Roll up and brush with oil. Cook for 30-45 min at 180 C.
