Makes 2-4 serves. Serve with yummy bread.
Ingredients
- olive oil
- 1 onion
- garlic cloves
- salt, pepper, cayenne
- 3 cups water
- 1 large sweet potato
- Can corn
- Can black beans
Method
- Chop all the veg into good size pieces. Start the slow cooker on
high and start with the oil, onions, garlic, and spices. Add a layer of
sweet potato and spice. Add the rest of the sweet potato and spice. Add
the corn and beans and spice. Mix all together with a little olive
oil.
- Add 3 cups water and cook for 4-6 hours on low.
