mains salad vegetarian vego
Ingredients
- 1/2 pumpkin
- spinach
- 2 boiled eggs
- 1 red onion
- 1 green capsicum
- feta
- turmeric
- balsamic, lemon juice, cumin, salt & pepper
Method
- Chop the pumpkin into bite-sized pieces. Roast in olive oil, turmeric, and salt & pepper.
- Chop capsicum into strips and char grill.
- Prepare a simple dressing of balsamic, lemon juice, cumin, and salt & pepper.
- Layer spinach, onion, capsicum, pumpkin, feta. Cover in dressing and mix around. Serve with halved boiled eggs.
