Method

  1. Chop the pumpkin into bite-sized pieces. Roast in olive oil, turmeric, and salt & pepper.
  2. Chop capsicum into strips and char grill.
  3. Prepare a simple dressing of balsamic, lemon juice, cumin, and salt & pepper.
  4. Layer spinach, onion, capsicum, pumpkin, feta. Cover in dressing and mix around. Serve with halved boiled eggs.
