Ingredients
- 1 kg small onions
- Some large chillis (chopped or whole)
- 1.5 tbsp salt
- 750 ml malt vinegar (or apple cider vinegar)
- 2 tbsp honey
- 1 tsp whole coriander seeds
- 1 tsp mustard seeds
- 1 tsp whole black peppercorns
- 1 tsp cloves
- 2 bay leaves
Method
- (To more easily peel the onions) Trim the ends of the onions and
place in a bowl. Pour boiling water over them and sit for a minute.
Drain, rinse, then remove the peels.
- Place the peeled onions in a bowl, sprinkle with salt and then toss.
Cover with a towl and sit at room temp overnight. Don’t sit longer than
14 hours or so. Rinse well and drain thoroughly.
- Make the brine: combine all other ingredients in a saucepan and
bring to a boil.
- Pack the onions in a jar. Paour hot brine over. Leave to cool and
store.
