keto mains vegetarian vego
Ingredients
- 1 large zucchini, quartered
- 100g mushrooms, quartered
- 1/2 red onion
- spring onion
- cayenne, praprika, cumin, salt & pepper
- 1 egg
- cheese
- sour cream, to serve
Method
- Scoop out bowls in the zucchini. Bake zucchini until mostly cooked (15 min).
- Quickly cook zucchini centres, mushrooms and onion in spices. Leave to cool.
- Once at skin temperature, mix with egg. Spoon into zucchini. Top with cheese and spring onion. Bake for 15 min.
- Serve with sour cream.
