Method

  1. Scoop out bowls in the zucchini. Bake zucchini until mostly cooked (15 min).
  2. Quickly cook zucchini centres, mushrooms and onion in spices. Leave to cool.
  3. Once at skin temperature, mix with egg. Spoon into zucchini. Top with cheese and spring onion. Bake for 15 min.
  4. Serve with sour cream.
