keto sweets vegetarian vego
Makes 16 pieces.
Ingredients
- 3 eggs
- 150g butter
- 1/4 cup sweetener (e.g. erythritol)
- 1 cup almond flour
- 1 cup almond meal
- 1/4 cup coco flour
- 1/2 tsp xanthan gum
- 1 cup pumpkin puree
- 1/2 cup crushed walnuts
- Cinnamon, numeg, cloves, salt
Topping
- Cream cheese and sweetener
Method
- Cream butter and sweetener. Add eggs. Mix dry ingredients & spices, then add wet ingredients. Mix in pumpkin. Mix in walnuts.
- Spoon into baking dish and bake at 180 C for 25 min.
