Ingredients
Eggplant
- 2x eggplant
- 1/4 cup almond meal
- 1/4 cup almond flour
- 1 tbsp parmesan
- 2x eggs
- dried basil
- dried oregano
- salt & pepper
Filling
- 400mL tub ricotta
- 1 cup chopped spinach
- 1 egg
- 1/2 cup shredded cheese
- dried basil
- garlic cloves
- salt & pepper
Sauce
- can chopped tomatoes
- 1 cup shredded cheese
Method
Prepare the eggplants
- Thinly slice eggplants. Salt and set aside for 30 min.
- Beat eggs in shallow dish. In another dish, mix flours, parmesan, oregano, basil.
- Coat eggplant slices in egg and then lightly crumb. Bake at 200C for 10-20 min.
Prepare the filling
- Mix all ingredients together.
Assembly
- Layer sauce, eggplants, cheese in a dish. Bake for 30-40 min at 180C.
