Ingredients
- punnet blueberries
- 1/4 cup erythritol (“sugar”)
- 1/4 cup shredded coconut
- 1/4 cup coconut flour
- 1 cup almond meal
- 1 cup almond flour
- 1/4 cup psyllium
- 1/4 cup flax meal
- 1 tsp baking powder
- 2 eggs
- 75g butter
- 1 tbsp olive oil
- 1 tsp vanilla essence
- 1 tub cream cheese (for topping)
- lemon juice (for topping)
- 1/4 cup erythritol (for topping)
Method
- Cream butter and sugar. Add eggs and vanilla essence.
- Combine dry ingredients in separate bowl. Add to wets.
- Combine with olive oil. Mix in blueberries.
- Spoon into prepared muffin tin/cake tin.
- Bake for 20min.
