Ingredients
- 7.5g yeast
- 1 3/4 cups buttermilk, warm
- 2 tbsp honey
- 1 egg, lightly beaten
- 1 tsp salt
- 400g flour
- 1/3 cup cornmeal/polenta
Method
- Combine all ingredients (except cornmeal) and mix well. Dough should
be soft and sticky. Cover bowl and rest.
- After a little while, prepare two baking trays with baking paper.
Using the cornmeal, stretch and shaspe the batter into discs, and place
on the trays. Cover, and allow to rise for a few hours.
- Heat a griddle. Cook muffins on one side 7-10 minutes, then flip and
cook the other side for 7-12 minutes.
