Roux
- Melt 4 tbsp vegan butter in saucepan. Stir in 1/4 cup flour, and 1 cup soy milk.
Ingredients
- 300g mushrooms, quartered
- 1/2 brown onion
- several cloves garlic
- 2 carrots, chopped
- 3 potatoes, chopped
- 1 cup vegetable broth
- a little soy sauce
- thyme, oregano, parsley, bay leaf, salt & pepper
Method
- Prepare all veg. Throw into slow cooker with broth, cover with water, and add herbs and spice. Cook all day.
- 10 min before serving, prepare roux. Stir and finish cooking on low.
