Curry Roux
Ingredients
- 85g butter
- 6 tbsp flour
- 2 tbsp curry powder
- 2 tbsp garam masala
- 1/2 tsp pepper
Method
- Melt butter in saucepan. Sift in flour and stir continuously, until light brown (10 min).
- Add curry powder, garam masala, pepper. Stir for 30 sec and remove from heat. Set aside.
Katsu
Ingredients
- Curry roux
- 1 onion
- 3 potatoes, chopped
- 2 carrots, chopped
- 3 cups water
- 1 cup vegetable stock
- 2 tbsp mirin
- 2x chicken schnitzels (or veg equivalent)
Method
- Bake schnitzels in oven at 180 C (they should be done about when the curry is).
- Saute onions in saucepan. Add potato, carrot, stock, and water.
- Simmer for 20 min, until veg is soft. Add roux and mirin and simmer for 5 min.
