Ingredients
Spicy coating
- 2 tablespoons of corn starch
- 2 tablespoons of rice flour
- 4 teaspoons of cayenne powder
- 4 teaspoons of chili powder
- 4 teaspoons of cumin powder
- 4 teaspoons of garam masala
- 1 teaspoon of turmeric
- 2 teaspoons black pepper
- Teaspoon of salt
Sauce
- 1/2 cup rice vinegar
- Small amount of thinly sliced red onion
- 1 tablespoon grated ginger
- 2 teaspoons sambal
- 1/2 teaspoon chili flakes
- A little chives
- A little chili powder
Ginger oil
- 1 tablespoon grated ginger
- 2 tablespoons vegetable oil
Method
Spicy coating
In a mixing bowl,
- Add corn starch and rice flour
- Add cayenne, chili powder, cumin, garam masala, turmeric, black pepper, salt.
- Whisk all the powders together.
Sauce
In a small bowl,
- Add vinegar, ginger, onion, chives, chili powder, sambal
Chicken
- Coat the chicken thoroughly and evenly.
- Drizzle with little oil and bake at 200 for 15 minutes.
- Turn chicken pieces and brush on ginger oil (on one side).
- Continue baking at 200 for another 15 minutes.
- Turn and let rest for 3 or 4 minutes. Should be nice and crispy.
- Serve with sauce, either mixed in or on the side.
Ginger oil
- Combine the oil and ginger in a ramekin.
