Ingredients
- 1/2 broccoli, florets
- 1/2 cauliflower, florets
- 1 cup chopped spinach
- 100g plain flour
- 100g butter
- garlic cloves
- 2 cups milk
- 1 1/2 cups veg stock
- 1 1/2 cups shredded cheese
- salt & pepper
- vegan bacon
- panko crumbs (topping)
Method
- Turn the oven to 180C. Start baking the bacon (alternatively, fry).
Prepare the stock.
- Melt 2/3 butter in a large pot on medium heat. Add garlic and cook
for 1 minute. Add half the flour, stirring constantly. Pour in half the
milk. Once nicely mixed in, whisk in the stock and rest of milk. Salt
& pepper to taste, with a little paprika.
- Once sauce has thickened after a few minutes, take off heat and stir
in cheeses.
- Combine veg and sauce in casserole dish. Layer with chopped
bacon.
- [Do this only if sauce is too thick] Melt remaining butter and whisk
in remaining flour with a little olive oil and water. Pour over top of
casserole dish.
- Bake for 20-25 min until golden.
