Ingredients
- ricotta
- butter beans
- spinach
- lemon juice
- red onion
- garlic
- asparagus
- 1 tbsp tomato paste
- crusty bread, to serve
- harissa paste, optional
Method
- Finely dice red onion, garlic, and asparagus. Cook in olive oil
until onions are translucent.
- Add spinach to pan and wilt.
- Add beans, paprika, chilli, tomato paste, 1/2 tsp stock powder, 1/2
cup water, salt and pepper.
- Soften beans gently.
- Once sauce has thickened stir in ricotta and add a dash of lemon
juice.
