Asparagus & Haloumi Salad

Ingredients

Method

  1. Finely dice red onion, garlic, and asparagus. Cook in olive oil until onions are translucent.
  2. Add spinach to pan and wilt.
  3. Add beans, paprika, chilli, tomato paste, 1/2 tsp stock powder, 1/2 cup water, salt and pepper.
  4. Soften beans gently.
  5. Once sauce has thickened stir in ricotta and add a dash of lemon juice.
